“C3 is named after my grandson, Calvin III,” Wilson said.
C3 is located in a small building formerly used by Dirty Fries and serves take-out only. “It’s takeout, but there’s a little seating outside,” Wilson said. “Once things get better, we plan to do a (third-party) delivery. We also have an adjacent parking lot that can be used as a spare parking lot.”

Wilson said he was drawn to the high profile of the C3 location, as well as what he felt was a void in the restaurant market. “I’m not a cook. I’m a businessman. But I think[Jamaican restaurants]need it.”
Wilson has been visiting his children in Winston-Salem for years, but in 2019 he finally moved from Massachusetts in search of opportunities.
“Winston-Salem is a little behind some of the other cities. I was looking for something meaningful and beneficial.”
He said he had high hopes for this place. He’s aware of the security issues that forced Dirty Fries to relocate earlier this year, but he’s confident there won’t be any problems. “I haven’t had any problems. I know a lot of places have tried to go there. But with a lot of circulation, I think it’s a good fit for someone with a decent product.” increase.

Wilson has a short menu of Jamaican classics with rice, peas and sautéed cabbage. Plates include pepper steak, jerk chicken, curry chicken, and brown stew chicken ($10 small, $18 large). There are also oxtails ($13 and $25).
Wilson said he’s doing a whole red snapper escovitch for a few special days for $25.
He also sells Jamaican beef patties ($3) and mac and cheese ($3). Drinks include Jamaican ginger beer and a variety of sodas.

The restaurant is open Wednesday-Saturday from 11 AM to 8 PM. Calvin Wilson said it will also sell non-Jamaican fried chicken on Monday and Tuesday.
C3 isn’t fully staffed yet, but it’s hit by the lunchtime rush. The other day, the crowd streamed out of the tiny foyer onto the outside patio, with phones ringing about every two minutes, and Calvin Wilson suggested calling ahead to order.
